In a Šentjernej local dialect MANGUP refers to »a bold overcomer of a life’s obstacles«. MANGUP is represented as a rooster, who is also Šentjernej’s town symbol.
Cviček is a type of wine made from a mix of red and white grapes, which, in the right proportions, blend in beautiful harmony. Cviček is made from wine of Žametna črnina, Blaufrankisch, Welschriesling and Kraljevina. It is reddish in color and has pleasant, fresh fruity aromas with an emphasis on red fruits (raspberry, cherry and red currant), smooth, with no distinctive bitterness and it’s always a dry wine. It has a low alcohol content (from 8.5 to 10% vol.), thus it is a particularly light and drinkable wine. When technological maturity in the vineyard is reached, only perfectly healthy and carefully selected grapes are hand-picked.
Harvesting of grape varieties for Cviček takes place in September and October. Each variety is processed(fermented) separately. Red wine making begins with the crushing and destemming of the grapes followed by 2-day maceration and then fermentation. When processing white wine grapes immediately after the destemming and crushing follows pressing. Fermentation takes place in stainless tanks. When the fermentation of red and white varieties is over and the wine has settled down, we blend it – mixing different varieties according to the statutory proportions.
